| 1 | c. | evaporated milk

| ½ | tsp. | vanilla

| | fresh-ground nutmeg

| - Simmer milk, salt, rice and raisins for 20 - 25 minutes, stirring occasionally.
- With a whisk, stir in combined evaporated milk, eggs, sugar and vanilla.
- Cook 3 minutes longer, stirring constantly until slightly thickened.
- Pour into serving dish.
- Grate fresh nutmeg over top and chill.
