| - In a non-reactive pan, combine sugar and water.
Bring to a boil.
- Stir until sugar dissolves.
- Reduce heat and simmer 5 minutes.
- Remove from heat and pour in lemon juice.
- Bruise the mint, add to mixture.
- Let cool.
- Strain the mixture into 2 flat pie pans.
- Set in the freezer for ½ hour.
- Scrape the granita with a fork.
- Return to freezer for 2 more hours; scrape
with a fork about every ½ hour until it is slushy.
