Ingredients Steps
1 c. sugar
3 c. water
1 c. lemon juice
2 sprigs mint
  1. In a non-reactive pan, combine sugar and water. Bring to a boil.
  2. Stir until sugar dissolves.
  3. Reduce heat and simmer 5 minutes.
  4. Remove from heat and pour in lemon juice.
  5. Bruise the mint, add to mixture.
  6. Let cool.
  7. Strain the mixture into 2 flat pie pans.
  8. Set in the freezer for ½ hour.
  9. Scrape the granita with a fork.
  10. Return to freezer for 2 more hours; scrape with a fork about every ½ hour until it is slushy.
