Ingredients Steps
2/3 c. honey
2/3 c. frozen apple juice concentrate
2 tbsp. lemon juice
1 c. dried cherries, chopped
1 c. dried apples, chopped
1 c. raisins
1 c. dried apricots, chopped
1 c. rolled oats
1 c. crispy rice cereal
1 ½ c. whole wheat flour
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. cinnamon
½ tsp. nutmeg
½ tsp ground cloves
2 tsp. vanilla extract
2 tsp. lemon peel, finely grated
6 egg whites, lightly beaten
  1. Preheat oven to 350°F.
  2. In a two-quart glass bowl, combine honey, apple juice concentrate, lemon juice.
  3. Microwave on high, two minutes, stirring after one minute.
  4. Add dried fruits, stir to mix.
  5. Microwave on high, four minutes, stirring every minute.
  6. Cool for five minutes.
  7. In a large bowl, combine rolled oats, cereal, flour, baking soda, cream of tartar, cinnamon, nutmeg, cloves.
  8. Stir in fruit mixture, vanilla extract, lemon peel, egg whites. Mix until well blended.
  9. Spread batter on a 9x13" ovenproof glass baking dish, bake at 350°F for 25 minutes, or until nicely browned.
  10. Cool on a wire rack for 20 minutes.
  11. Cut into 32 bars.
