Cranberry Sweet Potato Bake

Ingredients Steps
4 large fresh sweet potatoes
1 c. whole fresh or frozen cranberries
½ c. chopped walnuts or pecans
2/3 c. packed brown sugar
½ c. maple syrup
3 tbsp. melted butter
½ c. orange juice
1 tsp. cinnamon
  1. Preheat oven to 350°F.
  2. Butter a covered 4 qt. baking dish.
  3. Peel and chop sweet potatoes.
  4. Place in baking dish and toss with cranberries and nuts.
  5. In saucepan, combine sugar, syrup, butter, OJ and cinnamon.
  6. Bring to a boil and pour over sweet potatoes.
  7. Cover and bake for 30 minutes at 350°F.
  8. Remove cover, stir potatoes and cook for another 25 minutes, or until potatoes are tender.
